OUR AGAVE

Crafted exclusively from 100% wild Agave Pacífica (Angustifolia Haw), protected under Denomination of Origin standards, each plant matures naturally over 7 to 10 years before harvest. During that time, the Sonoran Desert infuses it with distinctive minerality, a character that reveals itself in every sip.

OUR PROCESS

Our agave’s journey is slow and deliberate. In the wilds of Sonora, only the finest plants are selected and harvested by hand using a traditional jaibica short dagger. The clean piñas or hearts are carried from the hills and slow-cooked by our Maestro Vinatero “Don Lito” Vidal for three days in handmade, conical earthen pits, fueled by local mesquite wood.

At peak softness, they are lifted from the glowing embers to preserve clarity and balance, and avoid any excessive smokey notes later on in the process. Crushed and blended with spring water, the agave ferments with native yeasts for up to 12 days under carefully controlled conditions.

Twice distilled twice in stainless steel pot stills, then guided through copper coils, the liquid becomes a pure, vibrant spirit—elegant and unmistakably rooted in Sonora.

OUR NAME AND IMAGE

We take our name from Palo Fierro, the ironwood tree of the Sonoran Desert—revered for its remarkable strength, density, and deep, natural luster.

For millennia, the Seri people of the Sonoran coast have transformed this noble wood into intricate works of art. Their time-honored craftsmanship informs and inspires our identity.

“Casa” evokes a sense of warmth and belonging—an invitation to enter, to gather, and to experience traditions that have been carefully preserved and passed down through generations.

Our emblem bears the Bighorn Sheep, one of Sonora’s most iconic creatures. Resilient and sure-footed, it embodies the untamed spirit of the desert and the refined character of our bacanora.

Our copper tones pay homage to Sonora’s storied mining heritage, honouring the generations whose labor and resilience forged its legacy.

Together, these elements imbue every bottle of Casa Fierro with a profound sense of place—shaped by the land, the culture, and the enduring soul of Sonora.
