WHAT IS BACANORA?
Bacanora is THE Mexican agave-distilled spirit worth discovering!
Given its Denomination of Origin, it is the only agave spirit made exclusively from Agave Pacífica (Angustifolia Haw), a variety that grows in the mineral-rich mountains of Sonora under the harsh desert sun, and is the only agave legally permitted for its production. This singular origin gives bacanora its own unique character, setting it apart from tequila and mezcal.
Its process mirrors that of other agave-distilled spirits—agave hearts are cooked, fermented and distilled—yet the exclusive agave variety creates a distinctive flavour profile: smoother than most mezcals with a gentle, smokey note.
While Bacanora is not traditionally barrel-aged, its legal classification allows for four categories:
Blanco (White/Silver) – Unaged like Casa Fierro Bacanora Blanco
Reposado (Rested) – Stored in barrels between three months and one year
Oro (Gold/Joven) – Blend of Bacanora Blanco and Reposado
Añejo (Aged) – Stored in barrels for more than a year

THE HISTORY BEHIND BACANORA
Bacanora, unlike tequila and mezcal, has a unique history shaped by prohibition and persistence. In 1915, its production was banned in Sonora, forcing distillers to take their craft underground for 77 years.
Even under prohibition, families kept distilling in remote parts of the Sierra Madre mountains. Working in secrecy, they preserved traditional methods and passed their knowledge down quietly from one generation to the next.
Bacanora was legalized again in 1992 and received its Denomination of Origin in 2005. Since then, it has slowly reemerged, still produced in small batches and closely tied to its Sonoran roots—shaped by the people who refused to let it disappear.
